Papa Joe's Pizza
By Dave Maxwell, Staff Writer
Joe and Kim Boteilho are the owner/operators of the Papa Joe’s Pizza Parlor in Pioche which opened during a snowstorm on February 4.
Kim has many years of experience in restaurant work, both in front of and behind the counter and grill, and once owned a bakery on the Southern Oregon coast.
Joe owns and operates Floors-N-More; he started this business in 1997 in Ely moving it to Pioche in 2000. As to opening a restaurant he said, “Basically it was a dream and we just did it.”
Joe gives credit to Vaughn Phillips for helping with the framing and sheeting work on the building and putting in utilities, and Joe then did most of the inside work.
Since opening, Joe says the response has been “Awesome. I’d like to thank everyone in Lincoln County because they’ve all been waiting, as we’ve been waiting, and it’s just getting better and better.”
Kim’s experience in both bakery and restaurant work has allowed them to make their own pizza dough, as well as, home made chili, soups and sauces. A salad bar is currently available only weekends, but Joe said when summer comes the salad bar will be a daily feature.
Papa Joe’s is open Monday through Saturday from 11 am to 8 pm and Sundays from Noon to 7 pm. During the summer months, store hours will be expanded but what those hours will be has not been determined.
During the spring they plan to finish the grounds and parking lot and, as the weather improves, have outside seating.
Boteilho said Joe Dunne of Pioche has given invaluable service to the restaurant with his own cooking experience as well.
